- 4 medium russet potatoes
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup shredded cheddar cheese
- 1/2 cup cooked bacon bits
- 1/4 cup sour cream
- 1/4 cup sliced green onions
Instructions
- Wash and scrub the russet potatoes thoroughly to remove any dirt.
- Poke several holes in each potato using a fork.
- Rub the potatoes with olive oil and sprinkle generously with salt.
- Preheat the air fryer to 400°F (200°C).
- Place the prepared potatoes in the air fryer basket and cook for about 25-30 minutes, turning halfway through.
- Check for doneness by inserting a fork or knife into the potato.
- Allow the potatoes to cool slightly, then slice each potato in half lengthwise and scoop out some flesh.
- Drizzle more olive oil on the inside of each skin and season with salt and pepper.
- Cook the potato skins in the air fryer for an additional 5-7 minutes until golden and crisp.
- Load each skin with shredded cheddar cheese and bacon bits, and return to the air fryer for a few minutes until cheese is melted.
- Serve on a platter garnished with sour cream and sliced green onions.
Notes
Choose russet potatoes for the best texture.
You can experiment with different toppings such as buffalo chicken or Mediterranean flavors.
