- 4 boneless, skinless chicken breasts (about 1.5 pounds)
- 1 cup honey mustard dressing
- 1 cup shredded Monterey Jack cheese
- 1 cup shredded cheddar cheese
- 8 slices of crispy bacon
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- Salt and pepper to taste
Instructions
- Step 1: Marinate the Chicken – Place chicken in a large zip-top bag or shallow dish, pour in honey mustard dressing, massage it in, seal and refrigerate for at least 30 minutes.
- Step 2: Prepare the Bacon and Cheese – Cook bacon until crispy, drain, and crumble. Shred the cheeses if not using pre-shredded.
- Step 3: Cook the Chicken – Preheat oven to 375°F (190°C). Heat olive oil in skillet, season chicken and sear in hot skillet for 5-7 minutes each side.
- Step 4: Assemble and Bake – Top chicken with bacon and cheese, then bake for 15-20 minutes until cheese is melted and chicken reaches 165°F (75°C).
- Step 5: Serve and Enjoy – Let chicken rest, then serve warm with desired sides.
Notes
For best results, marinate the chicken for longer. Use a meat thermometer to check for doneness. Serve with fresh herbs for added flavor.
