Beef Empanadas

Ingredients

  • 1 lb ground beef
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tsp cumin
  • 1 tsp paprika
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/4 cup green olives, chopped (optional)
  • 1/4 cup fresh parsley, chopped
  • 1 package of empanada dough discs (1012 discs)
  • 1 egg, beaten (for egg wash)
  • Oil for frying or baking

Instructions

  • Step 1: Prepare the Filling
  • 1. Cook the ground beef in a skillet over medium heat.
  • 2. Add onions and garlic, sauté until soft.
  • 3. Mix in spices and other ingredients.
  • 4. Allow to cool before filling the dough.
  • Step 2: Assemble the Empanadas
  • 1. Roll out the dough discs if necessary.
  • 2. Place filling in the center of each disc.
  • 3. Fold and crimp the edges securely.
  • 4. Brush with egg wash.
  • Step 3: Cook the Empanadas
  • 1. Fry in hot oil until golden brown.
  • 2. Alternatively, bake at 400°F for 20-25 minutes.

Notes

Empanadas can be made in advance and frozen. Reheat by baking or frying from frozen for a quick meal.
