Instructions
- Bring a large pot of salted water to a boil.
- Cook the cheese tortellini for 1 ½ minutes, then drain and rinse under cold water.
- In a large serving bowl, combine the cooled tortellini, pesto, sliced cherry tomatoes, drained mozzarella balls, and diced red onion.
- Gently toss the ingredients until well combined.
- Serve immediately or chill in the fridge for up to 3 days.

Avoid overcooking the tortellini; 1 ½ minutes is ideal.
